This pizza grilled cheese combines two ultimate comfort foods into one epic sandwich — crispy buttered bread, gooey mozzarella, pepperoni, and marinara. Ready in 10 minutes!

The Ultimate Pizza Grilled Cheese
What happens when you combine a pizza and a grilled cheese sandwich? Pure magic. This pizza grilled cheese has everything you love about both: crispy, buttery golden bread on the outside and layers of gooey mozzarella, savory pepperoni, and rich pizza sauce on the inside.
It’s the perfect quick dinner, game-day snack, or indulgent lunch that comes together in just 10 minutes. Serve it with marinara for dipping and watch it disappear instantly!
Ingredients
- 4 slices sourdough or thick-cut white bread
- 3 tbsp unsalted butter, softened
- 1/2 cup pizza sauce or marinara
- 1.5 cups shredded mozzarella cheese
- 1/3 cup shredded provolone or more mozzarella
- 20–24 slices pepperoni
- 1/2 tsp Italian seasoning
- 1/4 tsp garlic powder
- Extra marinara for dipping
Instructions
- Mix softened butter with garlic powder and Italian seasoning in a small bowl.
- Spread the seasoned butter evenly on one side of each bread slice.
- Heat a large skillet or griddle over medium heat.
- Place two bread slices butter-side down in the skillet.
- Spread a thin layer of pizza sauce on the unbuttered side of each slice in the pan.
- Layer mozzarella cheese over the sauce, followed by pepperoni slices, then provolone.
- Top with the remaining bread slices, butter-side up.
- Cook for 3–4 minutes until the bottom is deep golden brown. Press gently with a spatula.
- Carefully flip and cook the other side for 3–4 minutes until golden and cheese is fully melted.
- Remove from heat, let rest 1 minute, then slice diagonally and serve with marinara.

Tips for the Perfect Pizza Grilled Cheese
- Use thick-cut bread so it holds up to all the fillings without getting soggy.
- Don’t use too much sauce — a thin layer prevents sogginess.
- Cook on medium, not high heat — low and slow melts cheese without burning the bread.
- Press the sandwich gently with a spatula to help the cheese bond everything together.
- Let it rest 1 minute before cutting so the cheese sets slightly and doesn’t ooze out.
Variations to Try
Go meat-lover with crumbled sausage and bacon in addition to pepperoni. Make a veggie version with roasted bell peppers, mushrooms, and black olives. Use fresh basil and sliced tomatoes for a margherita style. Swap mozzarella for smoked provolone for a deeper flavor. Try different bread like ciabatta, focaccia, or brioche for a new experience.
Serving Suggestions
Serve with a warm bowl of tomato soup for the ultimate comfort food combo. A simple green salad on the side makes it a complete meal. For a party spread, make several sandwiches, cut into small triangles, and serve with small cups of marinara for dipping.
Frequently Asked Questions
What cheese works best for pizza grilled cheese?
Mozzarella is the classic choice for its melting properties and mild flavor. Provolone adds depth. A mix of both gives the best of both worlds. Avoid pre-shredded mozzarella if you can — it contains anti-caking agents that affect melting.
Can I make this in the oven?
Yes! Assemble the sandwiches, place on a baking sheet, and bake at 400°F (200°C) for 10 minutes, then flip and bake 5 more minutes until golden. You won’t get quite as crispy as stovetop but it works well for big batches.
Can I add other pizza toppings?
Absolutely! Mushrooms, bell peppers, black olives, banana peppers, cooked Italian sausage, or fresh basil all make wonderful additions. Just don’t overfill or it will be hard to flip.
What’s the best bread to use?
Sourdough is my top choice for flavor and structure. Thick white sandwich bread, ciabatta, or Italian bread also work great. Avoid thin sandwich bread — it gets soggy and falls apart.
Can I make these ahead?
These are best made fresh, but you can assemble the sandwiches (without cooking) up to 2 hours ahead and keep them covered in the fridge. Cook right before serving.
