- 1 tsp yellow mustard
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 8 oz egg noodles or pasta, cooked al dente
- 1 cup beef broth
- 1 cup sour cream
- 2 cups sharp cheddar cheese, shredded (divided)
- 1/2 cup diced dill pickles
- 2 tbsp pickle juice
- Sesame seeds for topping (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Cook egg noodles according to package directions until just al dente. Drain and set aside.
- In a large skillet over medium-high heat, brown ground beef until no longer pink. Drain excess fat.
- Add diced onion to the beef and cook 4–5 minutes until softened.
- Add garlic and cook 1 more minute.
- Stir in ketchup, mustard, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper. Cook 2 minutes.
- Add beef broth and simmer 5 minutes, stirring occasionally.
- Remove from heat. Stir in sour cream, diced pickles, pickle juice, and 1 cup of the shredded cheddar.
- Add cooked noodles and mix until fully combined.
- Transfer the mixture to the prepared baking dish. Spread evenly.
- Top with remaining 1 cup of cheddar cheese.
- Bake uncovered for 20–25 minutes until bubbly and the cheese on top is golden.
- Rest 5 minutes before serving. Garnish with sesame seeds if desired.

Tips for the Best Cheeseburger Casserole
- Use 80/20 ground beef for the best flavor — leaner beef can be dry.
- Don’t skip the pickle juice — it adds the signature tangy burger flavor.
- Undercook the noodles slightly — they’ll finish cooking in the oven.
- Let it rest before serving so the casserole sets up and is easier to portion.
- For extra golden cheese, broil for the last 2–3 minutes of baking.
Serving Suggestions
Serve this casserole as is or top individual portions with diced tomatoes, shredded lettuce, extra pickles, and a drizzle of burger sauce for the full cheeseburger experience. A side of coleslaw or a simple green salad rounds out the meal perfectly.
Storage & Reheating
Store leftovers covered in the refrigerator for up to 4 days. Reheat in the oven at 350°F covered with foil for 15–20 minutes, or microwave individual portions for 2–3 minutes. Add a splash of broth if needed to keep it moist. This casserole freezes well for up to 3 months.
Frequently Asked Questions
Can I make this gluten-free?
Yes! Use gluten-free pasta and check that your Worcestershire sauce is gluten-free. Everything else in the recipe is naturally gluten-free.
Can I use ground turkey instead of beef?
Absolutely! Ground turkey makes a lighter version. Add an extra tablespoon of Worcestershire sauce to compensate for the lower fat content and boost flavor.
What pasta works best?
Egg noodles are classic for casseroles. Rotini, penne, or elbow macaroni all work great. Avoid very thin pasta like angel hair which can get mushy.
Can I make this ahead?
Yes! Assemble the casserole, cover tightly, and refrigerate for up to 24 hours before baking. Add 10 extra minutes to the baking time if going from cold.
How do I make it extra cheesy?
Add another 1/2 cup of cheese to the meat mixture, and use a mix of cheddar and American cheese on top — American cheese melts into that classic diner-style cheese pull.
