Ingredients
- 1.5 lbs ground beef (or turkey/chicken)
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained
- 1 cup frozen corn
- 1 1/2 cups chunky salsa
- 1 can (10 oz) red enchilada sauce
- 8 large flour tortillas
- 2 cups shredded Mexican cheese blend
- 1 cup sour cream
- Fresh cilantro, jalapeños, green onions to serve

Instructions
- Brown ground beef in a skillet over high heat. Drain excess fat.
- Add taco seasoning, black beans, corn, and 1/2 cup salsa. Simmer 5 minutes.
- Preheat oven to 375°F (190°C). Spread enchilada sauce over the bottom of a 9×13 baking dish.
- Layer: 2–3 tortillas, half the beef mixture, a few dollops of sour cream, 1/3 of the cheese.
- Repeat layers. Finish with remaining tortillas, enchilada sauce, and a thick blanket of cheese.
- Cover with foil and bake 25 minutes. Remove foil and bake 10 more until bubbly and golden.
- Rest 5 minutes before cutting. Top generously with cilantro, jalapeños, and green onions.
Tips for the Best Mexican Lasagna
- Let it rest after baking — it cuts into neat slices and holds together much better
- Lightly char tortillas in a dry pan for 30 seconds per side to prevent sogginess
- Layer generously — more filling and more cheese is always the right call
- Make ahead: assemble, cover, refrigerate overnight, bake when ready
- Use a deep 9×13 dish — the layers stack up!
Serving Suggestions
- Top with fresh guacamole, pico de gallo, and extra sour cream
- Serve alongside Mexican rice and refried beans for a full spread
- Pair with a cold margarita or agua fresca
- Perfect for game days and potlucks — transport it in the baking dish
- Leftover slices reheat beautifully in the oven or air fryer
