Oreo Cheesecake Bites (No-Bake Mini Dessert, 4 Hr)

Oreo cheesecake bites — no-bake mini cheesecakes with Oreo crust, creamy filling and crushed Oreo topping. 30 min prep plus chill. 4 hours.

These are the dessert I bring to every party. They’re tiny no-bake cheesecakes — Oreo crust, creamy filling with crushed Oreos folded in, white chocolate drizzle, a mini Oreo on top. They take about half an hour to throw together, then they sit in the fridge until you’re ready.

People always ask if I made them, like, “no really, did you?” Yes, and you can too.

What you need

For the crust — 24 Oreo cookies crushed into fine crumbs, 4 tablespoons of melted butter, a pinch of salt.

For the filling — 16 ounces of cream cheese (softened to room temperature, this matters), one cup of powdered sugar, a teaspoon of vanilla, one cup of cold heavy cream whipped to stiff peaks, 12 more Oreos coarsely chopped.

For the drizzle — 4 ounces of white chocolate melted with a teaspoon of coconut oil.

To finish — 12 mini Oreos for the tops, extra Oreo crumbs.

You’ll need a 12-cup muffin tin lined with cupcake liners.

How I make it

Crush the Oreos in a food processor or in a zipper bag with a rolling pin. Mix with the melted butter and salt. Press about a tablespoon and a half into each lined cup, packing it down firmly. Stick the tin in the fridge while you make the filling.

Whip the cream to stiff peaks in a chilled bowl. Set it in the fridge.

Beat the softened cream cheese until it’s smooth — no lumps. Add the powdered sugar and vanilla, beat for another two minutes. Then gently fold in the whipped cream, then the chopped Oreos. Be gentle here, you don’t want to deflate it.

Divide the filling between the 12 cups, smoothing the tops. Cover and refrigerate for at least four hours, ideally overnight.

Before serving, melt the white chocolate with the coconut oil and drizzle it over the chilled bites. Press a mini Oreo onto each one and sprinkle with extra crumbs.

A few notes

Cold cream cheese gives you lumps. Take it out of the fridge an hour before you start.

They keep in the fridge for five days. You can freeze them undecorated for a month — drizzle and decorate after thawing.

Vegan version works: vegan Oreos (most are accidentally vegan), vegan cream cheese, coconut cream whipped instead of heavy cream.

Try this with chocolate chip cookies, Biscoff, or Nutter Butters instead of Oreos. All of them are great.
